Kadala parippu Pola/Kums/Cake


Kadala parippu Pola/Kums is a traditional Malabar recipe..Made this on Iftar days...bt nw gt tym 2 post ;)



Ingredients:-

Eggs-4
Bangal gram (kadala parippu)-1/4 cup
Sugar-for taste

Cardamom powdered-1/4tespn
ghee-for greasing

Method:-


Cook bengal gram with lil water in pressure cooker and Keep it aside
Add eggs and sugar , beat well until fluffy. 
Grind the (cooked)bangal gram with out adding water. 
Mix the fluffy egg mixture with bangal gram. 
Take a non stick pan , add little ghee.
 Pour the mixture,close the lid and keep it under simmer for 10-15 minutes.

Meat Surprise



Meat Surprise :) Inspired from my friend Shareef's sister nichu :)

































Ingredients:-

For filling--This masala filling  can be used for various snack items !

beef 1/2 kg-- [cooked with salt,Chilly powder-1/2tesp,turmeric -1/4tespn]  then mince it 
onion- 7 
green chilli -7[crushed]
ginger-garlic paste-3tbs
garam masala-1/2 tespn

Method:-

In a pan with oil saute[medium flame] the onion till its soft l.then add rest of the ingredients one by one and finally minced beef..mix it well. now sprinkle garam masala and curry leaves & coriander leaves

For Dough:-

All purpose flour-1cup
Salt-needed
Normal water-for kneading
Food color-a pinch(Optional)
Oil -for frying

Method:-

Mix all the above ingredients and knead it well lyk chappathi dough
Then divide the dough in to two equal parts
In one part add food color and knead very well...and keep it aside

Divide plain dough to small balls n roll it to small pathiris
then place the filling in centre
fold sides to a box(Refer pic) n keep it aside































Then roll the colored dough.. n cut it to long strips...
arrange these strips on top of prepared box ,n gently press it with hands...
using cookies cutter cut colored dough in to diiferent shapes n stick it  to box

Then fry it in oil till golden brown color :)

Panineer petti


Panineer peeti z a traditional malabar dish..Got this recpe from my dear  Safeeratha :)





FOR THE FILLING

Eggs - 3
Sugar - to taste
Cashewnuts
Kismis
Cardamom pwd - 1/2 tsp
Ghee
Rose water(optional) - 2 drops

1. Heat a pan,pour ghee,add cashewnuts & kismis,saute till it colour turns golden brown.
2. Beat eggs with sugar,cardamom pwd & pour to the pan,scramble it.Add 2 drops of rose water.Remove from fire.Keep it aside.

FOR THE PAN CAKES
Maida - 1 cup
Egg - 1
Salt - a pinch
Combine all the above ingredients together,add little water to it to form a medium thick batter.

METHOD


1 Heat a nonstick pan,pour little batter & prepare a small pancake.Before it gets fully cooked  carefully take it to a 

   plate,with back (Back sode of pan cake/Bad side)facing 2 us
2 spread  little ghee& turnover it
3 then place Filling on pan cake n fold it to box


4  Prepare another pancake bigger than the first one.When it gets half cooked ,remove frm flame ,add the filling 
    then keep the pancake petti which we prepared before.Fold the big pancke to a box (Refer above pic )

FOR SYRUP


Sugar -1 1/2 cup
Water - 1 cup
Lemon juice -1/2 tsp

Boil sugar & water till it becomes little thick.To this add lemon juice.Pour the syrup on the paneer petti & keep it aside for few min.Cut & serve.

samoosa


Samoosa :)




























Ingredients:-

For masala--This masala filling  can be used for various snack items !

ginger-garlic paste-3tbs
garam masala-1/2 tespn

Oil-for frying samoosas

Method:-

In a pan with oil saute[medium flame] the onion till its soft l.then add rest of the ingredients one by one and finally minced beef..mix it well. now sprinkle garam masala and curry leaves & coriander leaves

For Dough:-
All purpose flour-1c
Water--needed
Oil-1tespn(Optional)
Salt-needed
Mix all these well n make soft dough lyk chappathi dough
Then make small balls frm this... roll it 
n make a cone shape n fill it with masalas n seal the edges...
Deep fry it in oil

Here i used ready made samoosa pastry :)

Baking:-

If u want oil free samosas,then preheat oven to 200c
Then bake it for 10-15 mins..
mine z baked samoosas :)

Sphagetti-Chicken roll


Sphagetti-Chicken roll,simple n tasty


Ingredients:-

Spaghetti boiled 2 cups
Potato boiled and mashed 1 cup
Tomato sause 2 tbsp
Onion chopped 2 tbsp
Egg yolk 1
Salt 1 tsp
Black pepper 1 tsp
Lemon juice 1 tbsp
Coriander leaves 2 tbsp
Green chilies 2 chopped
Egg beaten 1
Bread crumbs for coating

Chicken-3/4 pieces
Chilly powder-1tespn
Turmeric powder-1/4tesp
Salt

Marinate all thse with chikn n shallow fry it
then mince the chicken n Keep it aside(Or u can cook chicken with little salt n pepper powder n shred it !)


Method

1. Cut spaghetti into pieces and boil till tender.
2. In a bowl mixed boiled spaghetti, boiled and mashed potato,Minced chikn, tomato sauce, onion,
    egg yolk, salt, pepper, , lemon juice, coriander leaves and green chilies.


































3. Then roll the sphagetti mixture
4. dip in beaten egg,then roll it in breadcrumbs















Shallow fry till golden brown color & Serve with ketchup

Orange Kums/Orange pola


Orange Kums/Pola is jus like our normal pola but jus giving an orange flavour to it..



Ingredients:-

Egg  3/ 4
fresh Orange juice without water 5 tbsp
sugar 5 tbsp or more
All purpose flour 8 tbsp
salt 1/4 tsp
orange zest-1/4tespn
orange essence few drops (optional)

Method:-


1 beat eggs n sugar till creamy .
2 Add the juice n salt slowly mix flour n orange zest .
3 Combine well to ribbon consistancy .
4 Heat oil in a non stick sauce pan add the mixture n cook in low flame for abt 10 to 15 mnts .
5 aftr 5 mnts add nuts of ur choice (i didnt add here )
6 Then turnover carefullyy...and cook for 1-2 mins..then remove frm fire

Steamed Banana Cake


Steamed Banana Cake ! Procedure iz same as dat of steamed dates cake !!! :)


Ingredients:-

1 Kerala banana/Nenthrapazham/Plantain
2 pieces bread
3 or 4 egg
5 tbsp sugar
2 tbsp milk powder
1/2 cup milk
1/4 tsp cardamom powder
2 drops banana essence(optional)



Method:-

Steam banana  till the peel separates slightly from it.let it cool.
grind all ingredients together.
pour this to a greased tin and steam it 15-20 minutes(U can chk it  by inserting tooth pick,wen it comes out clean..its done) in a medium flame.
before cutting let it cool for few minutes.

Carrot pola/Kums/Cake


Carrot Pola/Kums/Cake is a traditional Malabar item :)





























Ingredients:-

Carrot -3 [medium size]
Eggs -4/ 5
Sugar-for taste
Milk powder-6 tbsp
Ghee-1 tsp

Method:-

1 Add grated carrot, eggs,sugar and milk powder in a jiucer and grindwell.
2 Take a non stick pan and greese it with  ghee.pour the mix
3 After pour the mix close the lid and simmer for 15 minutes.
4 Wen it is cookd remove from fire

Note:-
u can also add 2 tbspn of vanila flavoured custard powder 2 dis..dats also nyc

Masala Cake/Kums stuffed with chicken filling


 Masala cake/Kums/Pola is a Malabar special item.....got this recipe from my dear friend Nafuthaa of  Nafu's Cuisine..



Chicken filling:-

1-Chicken-300-400g
2-Chilly pwd-1tsp heaped
3-Turmeric pwd-1\2 tsp
4-Oil
5-Onion finely chopped-3
6-Green chilly finely chopped-4 or 5 or more
7-Ginger garlic paste-1.5 tsp
8-Garam masala-1\2 tsp
9-Curry leaves -chopped
10-Coriander leaves


  • Marinate chicken with chilly pwd,turmeric pwd & salt.
  • Shallow fry chicken pcs & shred it or Mince by using grinder(just 1 or 2 turn)
  • Heat oil & saute onion & green chilly, till transparent.
  • Add salt & ginger garlic paste & saute.
  • Add garam masala, turmeric pwd(1\4tsp),curry leaves, coriander leaves--Mix well.
  • Add shredded chicken.mix well & remove from flame.
  • Chicken masala is ready.



Ingredients for the batter:-

Egg 4no.
salt 1/2 tsp
baking powder 1tsp
flour 1 cup

Take half the quantity of above ingredients,beat well till fluffy.




Grease the baking pan/non stick pan  with ghee(I baked in stove).
Pour the beated batter into the pan,close the lid and allow it to set for 2-3 mins



When its set add masala evenly 
then with rest of the ingredients beat again till fluffy,pour over the masala,



above that add some coriander leaves,cook it for 15 mints. wen one side z done...carefully turnover it..[Refer pic]



cook for 1-2 mins... & serve it...

Capsicum bread pola/Cake-- stuffed with prawns filling


Capsicum Bread Pola--got this super duper recipe from my dear Afsaatha of Kattoor Kafe.. Its reallyy yummmyy...am guaranteee...a must try recipe :)





Ingredients:-

Eggs - 5 big
All purpose flour/Maida - 5 tbsp
Masala - normal chicken/Fish / beef / veg masala(Here i used fish)
bread -7 to 8slices [depend upon ur size of the pan&if the pan is too small take less amount of total ingredients]
capsicum 1 [cut into rounded shape]
coriander leaves-few
seasame seeds-white or black- 1/2 tbs
green chilli- 2
salt to taste



For Masala Filling

Prawns -300-400g
Kashmiri Chilly pwd-1tsp heaped
Turmeric pwd-1\2 tsp
Oil
Onion finely chopped-3
Green chilly finely chopped-4 or 5 or more
Ginger garlic paste-1.5 tsp
Garam masala-1\2 to 3/4 tsp
Curry leaves -chopped
Coriander leaves


Marinate prawns with chilly pwd,turmeric pwd & salt.
Shallow fry Prawns pcs & Mince by using grinder(just 1 or 2 turn)
Heat oil & saute onion & green chilly, till transparent.
Add salt & ginger garlic paste & saute.
Add garam masala, turmeric pwd(1\4tsp),curry leaves, coriander leaves--Mix well.
Add shredded Prawns,mix well & remove from flame.

Prawns masala is ready.Filling:-


How to cook???

1 Beat the eggs using a n egg beater till frothy....
2 finally fold in the maida and salt&green chilly,, till well mixed
3 Grease some ghee in a non stick pan and pour the half of the egg mix place the bread slices,,,
4 press and level with ur hand...[the bread must be soaked in the egg mixture]


 5 now add the masala all over it..again spread the bread [place it carefully without no hole ]

 6 now top with remaining egg mixture&,fill the sides with egg mix.,
7 after 2 mins ,add the capsicum slices,,tomato [optional]coriander leaves,,,&sprinkle seasame seeds 
8 cover and cook on a very low flame till 10mns,,then turn other side carefully...(Refer pic)Its very 
  diffcult to turn over the cake using spatula... try this method 4 turnover it


9 cook for further 2,3 mins
















now its ready to serve ,,,,,:-)))
