Coin Paratha


 Coin Paratha..Got this Recipe frm my dear friend Benazir Zanjeer...



Ingredients:-

Atta - 3cups
Pepper - 1 tsp
Oil - 1tbsp
Salt
Water

In a bowl combine all the above ingredients & prepare a dough.Allow it to rest for 15-20 mins.

For method-- Refer the pics below ;)



After rolling....Heat a non stick pan... n cook coin parathas both sides... lyk normal chappathis ! Srve hot with any spicy veg or non veg dishes !

Kothu porotta-Egg version


Kerala style Kothu porotta-Egg version !




Ingredients :-

4 plain parottas
1 - 1 1/2 tablespoons oil
1/2 tsp cumin seeds
3/4 cup chopped onions
2 green chillies sliced lengthwise and across once
1/2 tsp ginger garlic paste
1/4 tsp turmeric powder
1/2 tsp red chilli powder
1/4 tsp curry powder (I used Eastern)
1/4 tsp garam masala powder
2 ripe red tomatoes, chopped
2 eggs
2-3 stalks coriander leaves, chopped
Salt - to taste
1/4 tsp pepper powder
A few drops of lime juice (optional- I don't use)



Method:-

1 Shred parottas. it can be until two inches long but not thick.
2 Heat oil in a kadai. Throw in the cumin seeds, followed by the chopped onions.
3 Sautรฉ in the green chillies after the onions are translucent.
4 Add the powders; turmeric, chilly powder, curry masala, garam masala, ginger garlic paste and sautรฉ
   in low flame until the raw smell disappears.
5 Take care not to burn the powders. Add the chopped tomatoes.
6 Stir along salt to speed up the frying time.
7 Sautรฉ until the tomatoes are cooked and turn mushy for about 2-4 minutes in medium flame.
8 Break in the eggs.
9 Combine the eggs with the masala. Dump the parotta shreds while the eggs are still half cooked and
   wet.
10 Mix gently to combine for 2 minutes and the eggs get cooked fully and the masala coats the parotta
    pcs.
 11Sprinkle a little water while you mix along if it turns too dry.
12 Add the coriander leaves, check salt and finish off with pepper powder and a few drops of lime
    juice.

Note:-
Same way u can try it with Chappathi... n can also add shreded chikn pices too !
I usually made kothu porotta with leftover porottas ;)

Gothamb Pathiri/Gothamb kai orotty


Gothamb/Wheat  pathiri/Gothamb kai orooty z ma mothers spl recipe...


Ingredients:-

Wheat flour-1 1/2c
Grated coconut-1/2c
Salt
Water
Oil-little



Method:-


  • In a bowl,mix wheat flour ,n grated coconut n keep it aside
  • Boil water with enough salt... pour the boiled water to the flour mixture...
  • knead it well..dough z like our normal chappathi dough
  • then take small balls frm dough... flatten it with ur palm(Instead of palm u can use pathiri press,,here i usd pathiri press)
  • Then heat a non stick pan...n cook kai orootty's..wen side z done,,,turn over it n smear little oil  to the edges
  • cook for 1-2 minutes
  • Then remove from fire
  • Serve hot with any spicy curry... non veg z more tasty

pathiri/Orootty !


Pathiri/Pathil/Orooty z our muslim traditional recipe... !



Ingredients:-

Pathiri Podi /Roasted Rice flour : 2 cups 
Water : 2  cups
Salt to taste

Method :-



  • Boil the water +salt in a  heavy bottom pan. 
  • Wen its starts boiling--slowly add  the roasted rice powder /pathiri podi and  stir continuously over low heat...stir well...
  •  Cover this and keep on a slow fire for 10 seconds. Switch off the stove. 
  •  As the dough will be very hot at this point, knead the dough with metal spoon. Let it reach a warm condition to knead with hands.
  • You have to knead the dough when it is warm. Knead the dough thoroughly using both hands for about 5 minutes,no need to add extra water.....knead  till the dough is no longer sticky.
  • The key to soft pathiri is to keep kneading until the dough is less sticky 
  • Don't add water or rice powder again. If needed, wet hands or apply a little coconut oil on palms. Any water or any flour added at this point will change the texture of the pathiri.





  • Divide the dough into small lemon sized balls.
  • Then Dust the rolling board and rolling pin using the same rice powder used for making pathiri dough.
  • Roll the balls using chapathi roller until you get thin round roti/pathiri. 
  •  Keep a tawa on medium flame and heat it.  Low flame and extra high flame will not make pathiris good and will end up in crispy pathiris.)
  •  Keep the pathiri on it, rotating in between,  &  when the pathiri starts bubbling ,turn it upside down. 
  •  Slightly press it using the back side of a spoon, this will help it to rise up as one single bubble. This way the pathiri will be so soft,
  •  wait for another 30 seconds so that even this side is done well and remove from the tawa. 
  • After one pathiri is done, and before putting the next pathiri, clean the brown powder on the thava with a dry cloth.
  • Optionally these pathiri can be served with cocnut milk & mutton/chicken or anyother spicy curry

Frozen Rice Puttu



 Here is a quick Breakfast that you can make using leftover plain boiled rice from a previous meal

vrry veryyy Soft putttuuu.....Try it...I Promise u "ll nevr want 2 make d ordinary 1....Got this recipe frm my dear Safeera Itha :)


Ingredients:-

Cooked rice-21.2c
Salt
Grated cocnut-1/4c





Method:-


1 Freeze coked rice for abt 5-6hrs(overni8)
2 After dat put the freezed rice in to water
3 Then each rice “ll seperate itself



4 Then squeeze excess water frm rice(At this tym rice is still frozen) and grind it in mixie,one or two pulse z 

   enough
5 After grinding, the mixture is lyk rice powder


6 Then add enough salt 
7 Now add a tablespoon full of grated coconut in the puttu maker and 
then add the rice flour..on top add tablespon of grated cocnut also


8 Close the lid and steam for 4-5minutes


Serve hot with any Spicy curry !

Rava Upma/Salt Mango tree



Rava Upma is very popular breakfast among south Indians.I got certificate of  "Most horrible upma " from my husband several times.But that gives me an inspiration to try experiments.Now am little confident in making upma ;) U can make upma with Dried fruits & vegetables also..This z d basic upma recipe..
Upma got this "salt mango tree: name from a malayalam film-Doore doore oru koodu koottam....u can enjoy the comedy scene:-here


 Ingredients
  • 1 cup Rava/Semolina
  • 1 1/4cup Water(Normal,not boiled)
  • 1" piece Ginger
  • 1no chopped Onioin
  • 2no Green chilly
  • 2no Red chilly/Vattal mulak
  • 1tespn Mustard seeds
  • needed Salt
  • 2tbspn Oil
  • 2 spring Curry leaves

Cooking Directions
  1. Heat a flat pan and dry roast rava lightly on medium flame
  2. dont make it brown.,once done,remove from fore and keep it aside
  3. Heat oil in a pan and add mustard seends & allow it to splutter
  4. Than add chopped onioin,Ginger,Green chilly & curryleaves,saute for 2-3mins
  5. Then add water & salt, bring to boil
  6. wen it starts boiling,add roasted rava/semolina little at tym
  7. stir continuosly to avoid lumps
  8. Simmer and cook till upma is ready
  9. Serve hot with bananas

Note:-

to make ur upma rich, u can add cocnut milk/Milk instead of Water
U can also add urad along with mustard seeds
Garnish with nuts+kismis !

Thenga pathil


Thenga pathal is a mahe special item... Got this recipe from my dear friend Saheela noufal :)


Ingredients
  • 1cup white rice/Pachari
  • 1 handfull Cooked rice
  • 1/4cup& 3tbspn extra Grated coconut
  • needed salt
  • needed for grinding water
  • 2tbspn oil/Ghee


Cooking Directions
  1. Soak white rice atlest 4 hrs
  2. then grind it with cooked rice & grated coconut-3tbspn with enough water
  3. batter z similar to our normal idly batter..
  4. add salt and mix well
  5. then heat a non stick pan and pour a ladle full of batter n spread it
  6. Then sprinkle coconut(1 spoon z enough) on top..
  7. Close the lid n smear little oil to the edges
  8. cook in med flame
  9. When one side is done..Turnover and cook for 1-2 mins... n remove frm fire
  10. Serve hot with any spicy curry

moodi pathal-a type of pathiri



Moodi Pathal z mahi special item...Got this maahi recipe from my dear friend Saneeba Rafiq....she teached me lots of traditional Malabar recipes...I’m always blown away by the creativity and imagination of my friend Saneeba Rafiq,.seeing all her creations fills me with awe and , a tinge of jealousy...here goes 2 recipe:-




Ingredients
  • 1cup Pachari/White rice
  • 1 hand full cooked rice
  • 1-2tbspn grated coconut
  • needed Salt
  • to smear the edges Oil


Cooking Directions
  1. Soak white rice atleast 3-4 hours
  2. then grind it with cooked rice & grated coconut with enough water
  3. batter z similar to our normal dosa batter..
  4. add salt and mix well
  5. then heat a non stick pan and pour a ladle full of batter n spread it
  6. Close the lid(Dats y its called moodi(Lid)Pathal) n smear little oil to the edges
  7. cook in med flame
  8. When one side is done..Turnover and cook for 1-2 mins... n remove frm fire
  9. Serve hot with any spicy curry
Note:-

The size of pathil depends upon u,u can make it small size lyk our normal pathiris

Whole green moong dosa/Cheru payaru dosa


Got this super healthy n yummy breakfast recipe from my dear friend Saneeba rafiq of Sister's Cuisine
Its really tasty & Delicious..kids will loved it

Ingredients
•3\4 cupWhole green moong
•3 tbspWhite rice
•1 sml Onion
•1 small pieceGinger
•2-3Green chilli
•Curry leaves-1 spring
•Coriander leaves-3tbspn
•Salt
•Oil

Cooking Directions


1. Soak whole green moong with rice, overnight.
2. In the Morning drain the water & grind green moong  along with onion, ginger, green chilli &
    curry leaves, to a coarse batter, of dosa batter consistency. (if you want thin moong dosa, then    
    grind  smooth)
3. Mix in needed salt.
4. Heat a tava and spread to your required thickness just like we make dosa,add oil.
5. Flip to cook on the other side too.(cook 2 minutes in medium flame each side or till light golden 
    brown)
6. Serve with coconut chutney or chutney of your choice

Kuboos Upma


Simply superbbb....Gudway 4 leftover kubooss



Ingredients:-

 kuboos big : 2no store in fridge for 2 days & then grind it in mixi
 green chilly-2no
 Onion-1no sliced
 Chilly powder-1/2tespn

 Ginger-choped 1tespn
 Greated cocnut-1c
 Salt-1/2tespn
 Turmeric powder-1/2tespn
 Water-1/2c
 Oil-3tbspn
 Mustrad-1 tespn
 Curry easf-1spring
 Red chilly-2no


Method:-

 1 Mix grinded kuboos with grated cocnut and keep it aside
 2 In a non stick pan add oil+mustard..wen it cracks..add Red chilly+curry leaf,saute t few mins
3 Then add turmeric powder+Green chilly+ginger..Saute well
4 Then add salt+water..Wen water boils..add Kuboos..mix well
5 Co0k for abt 5-8mins...

Remove frm fire n serve hot !!

Appom/Vellayappom/Paalappom


  Appom




  Ingredients:-

  White rice\Pachari - 2 cup
   cooked rice-1/2cup
  Yeast - 1 tsp
  Sugar-2-3 tbsp OR as required
  Salt - as required
  Grated coconut - 3/4cup 

  Water-needed for grinding

Method:-

1 Soak the rice in water for about 2 hours(preferably evening).
2 Grind it along with cooked rice &  water to a smooth batter.
3 Transfer it to a wide mouthed vessel.
4 Add in yeast & 2 tbsp of sugar, do not mix the contents with a spoon or ladle. Take the vessel in

   your hand & rotate it to a bit in circular motion so that the yeast slowly submerges in the batter.
5 Close it with a tight lid & leave it to fermentation over night.
6 Next day early morning, add salt & mix well.
7 To make appams, heat a non-stick appachatti, pour a ladle full of batter & rotate it till you gets the
   edges thin.
8 Pour a little oil in the sides of appam.
9 Close the pan & cook till done.
10 Middle part will be fluffy the sides with thin & crisp.

 Serve hot with any spiced dish.

*You can use preserved coconut water while grinding reduce the quantity of yeast to a pinch.

Kuthu Appom/Dots appom


This z d frist tym,am also hearing dis name !!! Dont knw abt u guys ;) Got this recpe frm a facebook cooking page..The name of Appoms varies frm place to place... as Vellayapom/Kallapom n all.. bt am sure this z not Kallapm/Vellapom,/Paalappom..The taste z entirely different !!




INGREDIENTS

   White Rice/Pachari-1 cup
   Basmati Rice-1cup
   coconut grated-1/2 cup
   
cooked rice-1/2 cup
   water for grinding

salt
sugar-1/2tsp
Yeast-1tbsp
 


Method

1) wash the white rice and basmati rice and soak for
     6hrs/overnight.
2) remove the soaked water , wash again and grind it using water to a thick paste. , just as we do 

     for appam.
3) once nicely grind, add cooked rice, coconut , sugar and little salt. grind again, to a fine paste.
4) there shouldnt be any grains, it should be a fine paste. add watre if needed, dont add too much

    water.
5) transfer to a bowl, add yeast to it and mix it very well. keep it aside undisturbed , for atleast 4 hrs...

    batter is ready.

after 4 hrs keep it fridge for later use...

6) Now heat a non stcik pan,i used appom chatti, pour a laddle of batter to pan, dont swirl, let it be as

    it is, close it wth a lid. (hres am jus swirled it )
   
dont turn . You can see dots appearing

Kuthu appams are ready aerve with cocnut milk,/chicken stew/Veg stew, / or any curry of ur choice

Beetroot Dosa/Beetroot rice crapes


Healthy,Tasty & Simple !! !!Dont feel YUCK........The taste of beet root is not at all highlited...



Ingredients:-

 Dosa batter-1c
Beetroot-1 sml
Green chilly-1no
Ginger-1sml piece
Salt
Oil

Method:-

1 First cook Beetroot with little water & keep it aside
2 Then grind the cooked beetroot with Green chilly&
   ginger 2 a fine paste
3 Add this paste 2 dosa batter & mix it well with salt
4 Heat a non stick pan,then pour a ladle full bater
5 spread them in to large circle
6 drizzle little oil around them & Close the lid and cook
   for 1-2 mins
7 Remove frm fire...


Serve it hot with Chutney or Sambar !!

Tapioca Dosa








Tapioca Dosa/Kappa Dosa
 
 
Ingredients
  • 300g   RawTapioca
  • 1cup Raw rice
  • 1/2cup Grated cocnut
  • 2no Shallots/Small onion
  • 1" piece Ginger
  • 2no Green chilly
  • 2 pinch Baking soda
  • 1 spring Curry leaves
  • little Oil
Cooking Directions
  1. Soak Tapioca and raw rice atleast 6 hrs
  2. Then grind it with Coconut+Shallots+green chillies+ginger+curry leaves
  3. Then add enough salt and Baking soda..mix all these well
  4. Then heat a tawa n pour a ladle full of batter and flatten it lyk normal dosas
  5. Then add little to the sides and close the lid and cook in low flame til the edges turns slight brown
  6. Then turnover it n cook for few mins !
  7. Serve hot with any spicy curry

Poricha pathiri



Poricha pathiri z our traditinal dish in Kottayam..Its entirely different frm Malabar's Ney pathiri /Ney pathil

These pathiri's puffed up really well like our Poori,bt i tuk dis pic after 1hr ..."ll update  puffed poricha pathiri's pic soon..



Ingredients

Rice powder-1c
Water-1c
Coconut grated-1/2c
Cumin-1/2tespn
Shallots chopped-3/4
Salt
Oil-for frying

Method:-

1 Boil water with coconut,choppd shallots,cumin and salt
2 When boils reduce the flame,and slowly add rice powder
3 Stir well for few seconds..Remove frm fire
4 Pour the contents in to a saucer,,kneed well to make a
    dough
5 Roll the prepared dough into a thick big pathiri. Cut out
   many small round pathiris from this using a lid or glass
   or any other round shape












6 Heat oil in a pan and deep fry these small pathiris till it
    turns slight brown colour on both sides.

Serve hot with chicken curry or any other spicy curry...
