WATER MELON PEEL STIR FRY......(Y wasting all those peels......its really tasty.....give a try...and let me knw the feedbak.....Watermelon rinds, usually a light green or white color, are also edible and contain many hidden nutrients, but most people avoid eating them ...Got this recpe idea from my friend Zubu Pary..n i cooked this in my own style, n it came out Good
Peel of water melon (After eating the sweet flesh reserve the peel in the fridge and lets try some magic on the other day for lunch)
Ingredients:-
peel off the green outer peel of the Water melon and cut into small cubes - 2 cups
Shallots - 6-8 (sliced )
Green chilly -1/ 2 (slitted)
Curry leaves - 2 spring
Cumin seeds-1/4tespn
Grated coconut -1/2 cup
Salt - to taste
Turmeric pwd - 1/4 tsp
Oil - 1 tbsp
Mustard seeds - 1 tsp
Dried red chilly-2no
Method:-
- Grind coconut with 2shallots+turmeric powder+cumin seeds & green chilly,Dont make it fine paste(1 or 2 pulse z enough)
1-Water melon rinds 2-Cut it in to cubes 3 (Coconut+green chilly+turmeric+Cumin) be4 grindind 4-After grinding ! |
2 Heat oil in a pan and splutter the mustard seeds+ curry leaves +dry red chillies..
3 Then saute shallots + Grinded cocnut mixture+salt
4 Then add the cubed peel mix well
5 add 1/2 cup of water and cover and cook till soft and done
Note:-
For a change u can add dried prawns while grinding the coconut mixture !
