Mushroom Biriyani
Got this yummyy n tasty Biriyani recipe from my dear friend Saneeba Rafiq of Sister's Cuisine !
Ingredients
For ghee Rice
- 2c Basmati rice
- 2tbspn Oil/Ghee
- 2 each cardamom,clove,Cinnamom
- 1 Large Onioin
- 2tspn Crushed ginger garlic
- Corinder leaves
- curry leaves
- 3c Boiled water
- salt
- 250g mushroom chopped
- 1 large Onion sliced
- 2 big Tomato pureed
- 1/2tspn Turmeric powder
- 1/2tspn Chilli powder
- 1tespn Garam masala
- 1tbspn Oil
- 1tbspn Ghee
- Corinader leaves-few to garnish
- Fried onioin-to garnish
- Salt-needed
- Cashews & raisins roasted
Grind all these together:-
1 onion+5 green chilly+1" piece ginger+4-5 garlic cloves+1 pc cinnamon+3 cardamom+3 cloves+ few stalks of coriander leaves
To Prepare Ghee rice
- Heat Oil & ghee,add spices,then onion & saute for few minutes,add ginger &garlic
- Then add washed & drained rice,stir fry for few mins
- Pour boiled water along with corinader leaves,salt & curry leaves
- Close the lid n cook in low flame,stir occassionally
To Prepare Masala
- Heat oil & ghee,Saute sliced onion
- When it turns golden brown ,add grounded masala paste,mix well &saute for 2-3 minutes
- Then add chopped musrooms,water will ooze out from it,soo cook until the mushrooms are soft,and all the water has evaporated
- Then add turmeric powder,Chilly powder & garam msala powder and fry for few mins
- After this add pureed tomato & tomato paste
- Stir well and cook until it becomes thick,add salt
- Gently mix in with Ghee rice & garnish with fried onions,roasted cashews n kismis
