Aval/Poha Mixture-Sweet version


Aval/Poha mixture-Sweet version.... is a low fat snack made with less oil and not a deep fried mixture...The ingredients used in this mixture are also readily available at every household. 



Ingredients:-

Aval / Flattened rice / Poha -white 2 cups (Thin variety)
Oil - 1 tablespoons
Roasted channa dal / Dalia - 1/4 cup(Optional)
Peanuts / Verkadalai / Ground nuts - 1/4 cups
Raisins - 2 tablespoons
Cashew nuts - 2 tablespoons
Sugar-3tbspn
Cardamom-3no powdered


Method:-


  1. Heat oil in a pan and add raisins, cashews, roasted Channa dal, peanuts. Fry till the nuts became slight  golden brown and raisins became pulpy.
  2. In the same pan,Add aval and roast till the aval becomes crispy and opaque.(no need 
  3.  to add extra oil)
  4. Then mix aval with Sugar,Cardamom powder & fried Nuts &raisins
  5. Allow the mixture to cool to room temperature and store it in a airtight container.

Curry leaves - 2 strings
Garlic cloves - 3 nos (crush it with skin) 
Dry red chillies - 2 nos
Asafoetida - 1 big pinch
Roasted channa dal / Dalia - 1/4 cup(Optional)
Peanuts / Verkadalai / Ground nuts - 1/4 cups
Raisins - 2 tablespoons
Cashew nuts - 2 tablespoons
Turmeric powder - 1/2 teaspoon
Red chilli powder - 1/2 teaspoon
Salt - to taste


Spicy & Sweet Mixture !

Method:-

1) Heat oil in a wide pan. When it is hot, add garlic cloves, curry leaves, dry red chillies   
   and asafoetida. Fry well till the curry leaves became crisp.
2) Add raisins, cashews, roasted Channa dal, peanuts. Fry till the nuts became slight 
    golden brown and raisins became pulpy.
3) Add turmeric powder, red chilli powder, salt and sugar. Mix well. Make sure not to 
   burn these masalas. If required reduce the flame at this stage to avoid burning.,keep it 
   aside
4) In the same pan,Add aval and roast till the aval becomes crispy and opaque.(no need 
    to add extra oil)
5) Then mix aval with masala items..
6) Allow the mixture to cool to room temperature and store it in a airtight container.

Veg fried Rice !


My version of Veg Fried rice...this z the basic fried rice recipe....U can alter the same rice recipe to egg fried rice n chicken fried rice..for egg fried rice..u can add scrambled egg with salt  &pepper to this rice...For chicken fried rice... u can add fried  chicken  pieces with salt,turmeric powder,chilly powder & salt....


Ingredients:-

2 cups rice
3 tbsp oil
2 onion
1 capsicum
11/2 carrot
1 1/2 tsp salt,
1 tsp pepper powder
1 tsp soy sauce

4 cups water

Method:-

1.Soak rice for 15 to 20 minutes.
2 Meanwhile chop onions, carrots and capsicum in sml pieces
3.In a heavy bottomed pan add oil,saute  capsicum and carrot for 2to 3 minutes
4Then Add rice,4 cups normal water(not boiled water), salt, pepper and soy sauce.
5Mix a bit,covered & cook in sim. Stir once in between.
6Cook till all water evaporates

7 Leave untouched for 5 minutes. Mix well and serve hot.

Ambalapuzha Paal payasam


Got this super duper recipe from my dear friend Aquilin shihab  Its a must try recipe..every spoon z ofcourse yummy...am guarante... 



Ingredients
Full Fat (long life) milk - 4 cups(I used Al Marai long lyf milk)
Sugar - 1 cup ( use the same cup of milk )
White Rice(Pachari) /Basmati Rice  - one hand full)


Method:-

1.Wash and drain rice...,make sure you dry it back
2.Run the rice in grounding jar in mixie,just to break the rice into 2 , just 2-3 immediate pulse z enough
3.Take a good pressure cooker pour in milk and sugar and stir it using a wooden spoon
4.Add once hand full of rice( not more,only one hand full u must use ) into this and tight close the lid with
   the cooker weight fixed on
5.cook in a low flame for 35 minutes approximately
6.U must care that cooker must not whistle at all.Cooker must be quiet all around 35 minutes
7.After 35 minutes switch off the stove .
8.Leave it closed as long as you can...
9.When you open it you can see the orangy rose ..AMBALAPUZHA PAALPAYASAM...if you open it    

   immediately u will not get the rose color,but leaving it more time will increase the taste and turns the color
    to orangy rose

Flower shaped breads stuffed with chicken !


Flower Buns stuffed with Chicken filling..its really tasty n yummyy !!!!







Ingredients for the filling:-



  • 500gChicken
  • 4Onion, medium, finely chopped
  • 4Green chilli, crushed
  • 1 tbspGinger garlic paste.
  • Curry leaves
  • 1 tspPepper powder
  • 1 tspGaram masala powder
  • 1\3 cupCapsicum chopped
  • 1\3 cup Carrot chopped
  • Salt
  • 4 tbspOil

  •      
     Method :-


    1. Cook chicken with little pepper powder and salt. De bone them and shred it nicely.
    2. In a non stick pan,heat oil and add cinnamon stick, then sliced onion and saute till translucent and lightly brown in color.
    3. Do not cover with lid while sauteing & keep a medium flame always.  
    4. Add the ginger - garlic paste,green chilly,curry leaves and salt and saute for few more minutes.
    5. Add shredded chicken to the prepared masala, capsicum and carrot and cook for another 5 minutes 
    6.  to infuse flavour. 
    7. Add the chopped coriander leaves ,sprinkle garam masala powder all over it,,mix  and switch off.



    Ingredients for the Dough:-

    4 cups all purpose/plain flour
    1 tbsp. instant yeast
    2 tbsp. powdered milk
    1 tsp. salt
    4 tbsp. oil
    egg 1 (plus 1 for glazing)
    1 tsp. castor/grinded sugar
    Sesame seeds-black n white for sprinkling

    Method:-

    In a bowl mix together the following ingredients: 4 cups flour, 1 tsp. salt, 1 tsp. castor sugar, 2 tbsp. milk powder, 1 tbsp. yeast, 4 tbsp. oil and 1 egg, knead to a medium soft dough with slightly warm water, leave to rise for 1 hour.

















    • When it rise.lightly knead it divide the dough on to small balls 
    • Roll it to a circle

    •  
    • Make small lemon sized balls from the filling and place it in the centre of of flattened Dough
    • Then cover it well





















    Roll the chicken stuffed balls to a circle of 1/4" thickness using a rolling pin.
    Then slit the circle using a knife to 10-12 slots(Refer the above picture)  n carefully turn around each slots !









    • Egg wash each flowers and spinkle sesame seeds.. !
    • Place the prepared flowers on a greased baking tray
    • Pre-heat your oven to 180 C. Bake for about 15-20 minutes or until tops are golden
    • Remove frm the oven and brush them with melted butter. Keep them covered until time of serving so
    • they stay soft.

    Macroni Pola/Pasta Cake-Stuffed with chicken filling !


    Macroni Pola /Pasta cake wtuffed with chicken filling !

    This z 1yr old pic..prepared dis on last Ramdan.. "ll update soon  it with a gud pic on this Eid In Sha Allah

    Ingredients:-

    1-Macroni/Pasta-1 1/2c
    2-chicken pcs(medium size)-4-5 marinated with 1tespn Kashmiri chilly p+turmeric p-1/4 tsp+salt
    3-onion finely chopped-1
    4-green chilly finely chopped-1 or 2
    5-garam masala-1 tsp
    6-egg-4
    7-pepper pwd-1 tbsp
    8-coriander leaves-1\2 cup(no need of curry leaves)
    9-Ghee-1tespn

    Method:-

    1 Cook Macroni in boiling water+salt,.Add a little oil also.Drain, rinse under cold running tap water and drain 
        again.
    2 Marinate chicken pieces with little chilly pwd,turmeric pwd and salt.Fry it.
    3 In another pot heat oil,saute onion, green chilly-add garam masala,shredded fried chicken pcs n salt-saute it for 
       2minutes and remove from stove.
    4 In a bowl beat the egg with spoon-add pepper pwd,coriander leaves,salt-mix well
    5 add chicken masala and macroni,mix it thoroughly.
    6 Heat a nonstick pan-grease it with ghee, then pour noodles mix in to it-leveled with spoon-cook in low flame.
    7 wen one side is almost done ,turnover and cook for 5 mins..then remove frm fire
    8 serve it hot

    Note:-

    Carefully turnover the pola..otherwise it"ll brockn
    Same way u can use it with noodles/Semiya 


    Achar aloo


    ACHAR ALOO got this recipe frm my dear friend Saneeba rafiq of sister's cuisine.. Thanks dear 4 dis wonder ful recipe :)


    Ingredients
    1\2 kg Potato
    1 + 1\2 cup Onion, sliced
    1 tbsp Ginger garlic paste
    1\2 cup Curd
    4-5 tbsp Oil
    10-15 (as per taste) Long yellow or green chillies
    Salt to taste


    POWDER THE FOLLOWING TOGETHER:
    1 tsp Fenugreek seeds
    1 tsp Black cumin \ Black caraway
    1 + 1\2 tsp Cumin seeds
    2 tsp Mustard seeds


    Cooking Directions
    Boil and peel the potatoes, and cut into 1" thick cubes.
    Mix with curd, ginger garlic paste and salt. Keep aside for 1\2 hour.


    Slit the chillies and stuff with masala powder and salt.


     Heat oil in kadai and fry onion till light brown.
    Add the potatoes and cook till the liquid dries up.
    Continue to cook till potatoes are well roasted.
    Add chillies and fry for 2-3 minutes.
    Add 1\2 cup hot water and simmer for 5 minutes and remove from fire.
    Serve hot with Chappathi/Porotta/Naan

    Spicy Bread Masala Cake/Kums/pola


    Bread Pola./Bread Cake stuffed with spicy chicken filling !....Hot & spicy !!!!! This a traditional Malabar Recipe....






    Ingredients:-


    Bread slices - 8
    Egg - 3/4
    Milk - 1 cup

    Ghee-2tespn
    Salt

    For the masala filling:-


    Chicken breast - 2
    Onion - 3
    Garlic - 1/2 tsp
    Ginger - 1/2 tsp
    Green chillies -3 or 4
    Pepper pwd-1/2tespn
    Garam masala-1tespn
    Coriander leaves-few
    Salt-needed

    1. Cut chicken into small pieces,cook chicken with turmeric pwd,salt ,pepper powder
    2. Shred the chicken & keep it aside.
    3. Take a pan,heat oil,saute onion ,garlic, ginger,green chillies one after another.
    4. Add garam masala,pepper,salt, coriander leaves & saute for few min.Remove from fire & keep it aside


    Method:-



    1. Remove the brown layer of the bread slices.
    2. In a blender,add eggs,milk,bread slices,salt & blend it very well.
    3. Take a non stick pan,heat it,pour 2tsp ghee & pour half of the bread batter & cook for few min
    4.  then spread the masala on it & then the remaining half bread mixture.

    1. Cook for few minutes.Just insert a knife in the middle of the pola if it comes out clean it is done or else cook again for few more min.
    2. Cook on low fire.

    Serve hot with tomato ketchup !

    Simple Bread Pudding


    Got this yummy bread pudding from  Cookery show -Adukkala in Asianet...This z the first pudding that i've tried... Very simple n tasty too !




























    Ingredients:-

    Milk Bread-6/7 slices
    Chocolate paste(Nutella)/Strawberry jam-5tbspn
    Milk-1/2litre
    Condensed milk-1tin
    Cornflour-2tbspn
    Vanila essence-1/2tespn
    Chopped badams/nuts/pistachio-little

    Method:-
    1. Cut the brown portion of the bread and apply chocolate paste/strawberry jam and keep it aside
    2. Add cornflour in  2 tbspn milk and keep it aside
    3. Mix milk+condensed milk…and wen it start to boil..reduce the flame..
    4. add Cornflour-milk mixture.Stir well..
    5. wen the mixture begins to thick and coat back of spoon remove from fire
    6. then add vanilla essence-1/2tespn
    7. Dip bread pieces in this milk mixture and arrange in a flat tray..
    8. then pour  milk mixture over dat
    9. then dippd bread…then milk mixture..
    10. On top pour the remaining milk mixture and add chopd nut/badams/pistachio
    11. Serve chilled

    Fish molly


    Got this wonderful Fish molly recipe from my dear friend Aswathy Nishanth..This z her mother's recipe..Its  super Duper :)




    Ingredients

    1/2 kg fish (preferably king fish or pomfret)
    Onion – 1 medium
    Ginger & Garlic – 1 tablespoon each (crushed)
    Green chillies split lengthwise – 4
    Freshly grounded Pepper powder – 1/2 teaspoon
    Turmeric powder – 1/2 teaspoon
    Thin Coconut milk – 1 1/2 cup
    Thick Coconut milk – 1/2 cup
    Salt, oil & curry leaves – accordingly

    For Marination:-

    Chilli powder – 1/2 to 3/4 teaspoon
    Turmeric powder – 1/4 teaspoon
    Lemon juice – 1/2 teaspoon
    Salt





    Method:-



    1. Marinate the fish pieces with turmeric powder,chilli powder , salt & lemon juice. Keep it for half an hour.
    2. Shallow fry the marinated fish for just 2-3 minutes.
    3. Heat oil in a pan. Add crushed ginger garlic & green chillies.
    4. Add chopped onions. Once the onion becomes soft add ,turmeric powder,pepper powder- and curry leaves and saute well
    5. Add thin coconut milk and let it boil. 
    6. Add the fried fish pieces and salt to this and boil for further 5 minutes.
    7. Add thick coconut milk and boil for another two minutes.
    Serve Hot with Rice/Chappathi/Appom

    Sugar cookies in microwave



    Sugar Cookies --Try this simple & most easiest recipe for cookies that i got it from Here.. It is easy to make with very few ingredients in microwave method in 1 1/2 minutes ! Its really awesome...n came out perfect !


    Ingredients:-
    • 3/4 cup butter
    • 1 cup sugar
    • 2 eggs beaten
    • 1 tsp vanilla essence
    • 2 2/3 cup flour
    • 2 tsp baking powder
    • 1/2 tsp salt 
    Method:-
    • Soften butter by microwaving for 15 seconds in microwave.
    • Gradually add sugar to butter and stir continuously to make butter cream.



    Sift flour,baking powder &salt and keep it aside

    Beat in eggs and vanilla essence to butter cream until fluffy.
    Add sifted flour to creamed mixture and combine well.


    The dough should be somewhat the consistency of Pizza dough or Chapathi dough.



    Chill dough 1 hour until firm.Roll out to 1/4-inch thickness. Cut in shapes.

    • Arrange cookies in a microwave safe plate after dusting with little flour
    •  Please take care to leave I/2 inch space between the cookies because once the cookies get baked they will lump.
    • Cook 1 1/2 minutes in microwave option. If you feel that more crispiness is required microwave for 20 seconds each.

     Allow to cool and enjoy eating!!!

    Cake balls (No bake)


    Got this wonderful recpe from my dear friend sajina bishar...n for this i got Best presentation prize from her page...Its really yummy..its a must try item :)


    Ingredients:-

    1.Maida-1 cup
    2.Sugar-1 cup
    3.Eggs-4
    4.Butter/Dalda-100g
    5.Baking powder-3/4 tsp
    6.Vanilla essence-1 tespn

    Procedure:-

    1 Clean your unniyappa chatti & dry it properly.
    2 Find a proper lid for the unniyappa chatti & close it.
    3 Find a steel container(charuvam) with lid which sits perfectly on top of the closed unniyappa chatti..
    4 This structure should be perfect...else the cakes wont be baked properly...



    For the batter:-

    1 Sift flour with baking powder and keep it aside
    2 Beat the eggs and butter yill fluffy.
    3 Now add, sugar,vanilla essence & ...& blend till
       smooth paste..
    4 Finally add flour+baking powder mixture...& mix well
       without anu lumbs
    5 Keep aside this batter for 1 hour.

    Cake Preparation

    1 Fill the steel container with full water &  close its lid & keep it for boiling.
    2 Once it starts boiling, place the unniyappa chatti on the stove properly & start heating in
       medium flame.
    3 Once the unniyappa chatti is heated, reduce its flame.
    4 Now start pouring the batter in each of its holes with a spoon(Don't fill the holes completely as the
        cake would rise up when baked..Filling half the hole would do)
    5 After filling all the holes close the unniyappa chatti with a lid.
    6 Now place the steel container with boiling water on top of this closed unniyappa chatti..& see to it
       that it doesn't fall...

    (Be very careful during this process..the hot water might spill..catch the container with two hand towels & do the shifting)

    6 Cook in very low flame..Let it bake for 5 mins & shift the steel container carefully & open the lid &
       check by inserting a small knife in the center of the cake..
    7 If not cooked, keep all the equipments back in the same postion & wait for 2 more mins.
    8 When its done, open up & toss the cakes out of the unniyappa chatti into a large bowl.
    9 Just taste your first cake now...you'll get the feel...
    10  Repeat this same process till the batter is finished..
    11 Need not change the flame till the end & now you must have got the correct baking time..so you need
         not check..just take it out on that time..
    12 Need not boil the water in the steel container also..only in  the beginning,....Just place it on top
         everytime.
    13 Let the cakes cool, then only you can keep it in an air tight container..it will stay there for more than
        2 weeks..

    bt am sure it "ll complte within hours !!!!!


    Strawberry jello Pudding


    This is a three ingredient recipe that I found in ‘Vanitha’ magazine as an ad for condensed milk..very sinple n yummy pudding !!!!! try it out ! am guarantee...



    Ingredients:

    1 packet – Strawberry/Raspberry Jelly Pudding Mix
    1/2 tin condensed milk
    170 gm chilled cream

    Method:

    1. Prepare jelly as per packet instruction. i.e. Empty the sachet into a large bowl and add 1 cup of   boiling water. Stir well until all jelly crystals are dissolved. Add another cup of normal water,mix well and keep in freezer until the jelly starts to set from sides.
    2. Take it out from freezer and beat well with a wire whisk until it is frothy.
    3. Add ½ a tin condensed milk and mix very well.
    4. Add the chilled cream (whipped) and mix well until well combined.
    5. Serve in a clear dish and refrigerate for a minimum of 3 hours.
    6. Garnish with fruits/Strawberries

    Note:-

    U can serve dis with little whipped cream on top
    U can use anyother jelly flavour


    Avocado/Butter Fruit pudding !


    Got this yummy recpe frm my dear friend Banazir Zanjeer,owner of facebook page Bennu's Cookomania



    Ingredients:-

    Avocado/Butter fruit - medium sized 1no
    Milk - 1 1/2 cup
    Condensed milk - 1/2 tin
    China grass/Agar agar- 5 gm






    Method:-

    1.Soak china grass in 1/2 cup of water for 10 min.
    2. Combine milk,condensed milk in a pan & boil it.If u want more sweet u can add sugar in it.Keep it  

        aside.
    3.Remove the skin & seed of avocado.Blend the avocado into fine paste.
    4.Add avocado paste to the milk & mix it very well until well combined.
    5.In a pan melt china grass.
    6. Add the melted chinagrass to the milk mixture .

    7.Pour it into a serving dish & chill it in refrigerator till set
