Mint Rice/Pudina Rice

This is a very simple and flavorful rice perfect for bachelors and busy women...its a refreshing dish made frm Mint leaves...The addition of pudhina makes this rice dish nutritious as well.




Ingredients

Rice - 2 cups soaked for 30 mins
Ghee-4 table spoon
Bay leaf-1
cardamom-2
cinnamon stick-1 piece
clove-2
pepper cones - few
onion-3 big
Tomato - 1 big ( Cherry tomato is good),i used norml
Ginger Garlic Paste - 2 tablespoon
Green Chilli - 4no
Mint leaves - 1 bunch
Water 4 cups
Salt - to taste

Method:

1 Preheat a vessel and pour ghee to it.
2 Put whole masalas.Once pepper cones are
   craked
3 saute Onion in it and then add tomato+salt and
   saute.Add ginger garlic paste and saute.
4 Either crush or grind mint leaves and green chillies to
   make a fine paste.Add this to it and saute for a
   while.
5 Add soaked rice and stir for sometime.
6 Add the 4 cups of water.Allow to boil on a high
   flame,add salt and simmer the flame and cover the
   lid and cook for 15 mins.

Serve hot with raita,salad,chicken ,mutton or beef.
