Banana Cutlet/Nenthra pazham cutlet



Ripe banana Cutlet..got this recipe from Lakshmi nair's magic oven...my friend Aswathy Nishanth send me d you tube link..Thanks lot my dear <3




Ingredients
  • 2 medium nenthra pazham/yetha pazham
  • 1/2cup grated coconut
  • 2 pinches cardamom powder
  • 1 tespn (optional) Sugar
  • 1tbspn(optional) nuts & kismis
  • 1/4cup bread crumbs
  • 1tbpn milk
  • 2-3tbspn Ghee/Butter


Cooking Directions
  1. Cook bananas in a steamer
  2. peel off the skin and mash it well
  3. heat a non stick pan n add little ghee
  4. saute nuts& kismis n keep it aside
  5. In the remaining ghee,roast grated coconut,no need to change its color,
  6. Then remove frm flame and mix it with cardamom ,sugar,fried nuts & kismis
  7. add these roasted mixture to cooked banana & mix well
  8. Roll in to medium sized balls and flatten it lyk cutlet
  9. Dip cutlets in milk n roll it in bread crumbs
  10. Heat ghee/butter and shallow fry both sides till light brown color
Note:-
U can skip Coconut roasting process...directly add fresh coconut to mashed banana

moodi pathal-a type of pathiri



Moodi Pathal z mahi special item...Got this maahi recipe from my dear friend Saneeba Rafiq....she teached me lots of traditional Malabar recipes...I’m always blown away by the creativity and imagination of my friend Saneeba Rafiq,.seeing all her creations fills me with awe and , a tinge of jealousy...here goes 2 recipe:-




Ingredients
  • 1cup Pachari/White rice
  • 1 hand full cooked rice
  • 1-2tbspn grated coconut
  • needed Salt
  • to smear the edges Oil


Cooking Directions
  1. Soak white rice atleast 3-4 hours
  2. then grind it with cooked rice & grated coconut with enough water
  3. batter z similar to our normal dosa batter..
  4. add salt and mix well
  5. then heat a non stick pan and pour a ladle full of batter n spread it
  6. Close the lid(Dats y its called moodi(Lid)Pathal) n smear little oil to the edges
  7. cook in med flame
  8. When one side is done..Turnover and cook for 1-2 mins... n remove frm fire
  9. Serve hot with any spicy curry
Note:-

The size of pathil depends upon u,u can make it small size lyk our normal pathiris

Egg in coconut milk gravy






Egg curry in Coconut milk..

Ingredients

Eggs – 2, hard-boiled
Onion – 2 medium, thinly sliced
Ginger – 1.5 tsp,
Green chilies – 2 – 3, slit
Curry leaves – 1 spring
Tomato – 1 medium-small, sliced or chopped
Coconut milk, thin – 3/4 cup
Thick coconut milk – 1/4 – 1/2 cup
Turmeric powder – 1/2 tsp
Garam masala powder – 1 tsp or to taste
Crushed pepper – 1/4 – 1/2 tsp
Coconut oil – 1.5 tbsp
Mustard seeds – 1/4 – 1/2 tsp
Salt – To taste
Coconut Oil-2tbspn




Method:-

1 Heat oil in a deep pan. Splutter mustards 
2 Add sliced onion and little salt. Fry for a few minutes and add ginger, green chilies and curry
   leaves.
3 Continue sauting until onion turns light golden.
4 Bring down the heat and add turmeric powder and garam masala powder. Sautรฉ for a minute and
   add tomatoes.
5  After a minute, add thin coconut milk. Cook at medium heat for 5 – 7 minutes. Check for salt.
6  Add thick coconut milk, curry leaves and crushed pepper. Mix well and add the eggs.
7 Cook for 1 minute at low heat. Switch off.

It goes very well with idiyappam and palappam.

Banana Jelly Pudding



Banana-jelly pudding...Its really yummy & tasty :)
Got this recipe from my dear Friend Fajeeda Ashik of faji's hot pot



Ingredients

1 packet Biscuit (marie or digestive)
1packet Banana flavoured jelly
2 Sachets Dreamwhip powder
1 tin Nestle cream (banana flavurdr)
1 C Cold Milk
2 Chiquita Bananas
1/4 C Melted butter
10 grms Gelatine
1/4 to 1/2 tin Condensed milk
Nuts to garnish
 


Method:-

1 Powder the biscuit and mix with melted butter and set this as a base in a pudding dish .
2.Keep this in the fridge for a while.
3.Make the jelly as per the instructions and set the jelly fully/partially  in a refrigerator
4.Now in a bowl add the dream whip powder and cold milk and beat till fluffy.
5.Add the banana flavored cream and beat well.
6 Add the condensed milk to the cream mixture.
7 Soak the gelatine in 4 tbsp water for 10 mins.
8.Double boil the gelatine and add this to the cream mixture
9 Now crush the set jelly with a fork.
10.Add the crushed jelly to the cream mixture well.
11.Now cut the bananas into round and keep the slice over the biscuit base.
12.Pour the cream jelly mixture over the bananas and set this in the fridge for couple of hours.
13.After the pudding is set garnish with nuts.
14 Slice and enjoy......

Cantaloupe Cake/Cantaluope Quick bread-microwave method


Cantaloupe cake ! Dont get wondered by the name...Cantaloupe z our Sweet melon..Got this simple n yummy recipe from Mareena Jerrish of mareenas recipe collections..


Ingredients:-

Eggs- 3
Vegetable oil- 1 cup

Sugar- 2 cups
Vanilla extract- 1 tablespoon
Cantaloupe pureed- 2 cups
All purpose Flour- 3 cups
Salt- 1 teaspoon
Baking soda- 1 teaspoon
Baking powder- 3/4 teaspoon
Cinnamon powder- 2 teaspoons
Ground ginger- 1/2 teaspoon





Method:-

1 Lightly grease a Microwave safe bowl and dust it with flour../line its base with a parchment paper
2 In a large bowl, beat together eggs, oil, sugar, vanilla and cantaloupe.
3 In a separate bowl, sift together flour, salt, baking soda, baking powder, cinnamon and ginger.
4 Stir flour mixture into cantaloupe mixture; stir to combine.
5 Pour batter into prepared pan and Microwave for 6-7mins(HIGH) until a toothpick inserted into
    center of the loaf comes out clean.
6 Leave the cake in the oven for atleast 10 mins,let it cool completely before serving


Note: Time varies from different ovens..mine z 800w,adjust time according to your oven
You can bake the bread in a preheated oven @165c for abt 1hour.. or till it is done by inserting a toothpick in the centre.

Chicken Majboos


Friday special Chicken majboos..Got this recpe from my dear  friend Saneeba rafiq of Sister's Cuisine




Ingredients:-

Chicken, with skin - 1 kg, cut into 6 pieces
Mix ground spices(coriander, cumin, cinnamon, cloves, cardamom, peppercorn, dried lime) - 1 tbsp
Garlic, chopped - 2 cloves
Lime juice - 2 tbsp
Oil - 1\4 cup
Onion, chopped - 2 medium
Tomato - 1
Tomato puree - 1\4 cup
Ginger Garlic, chopped - 1 tbsp
Green chilli - 3
Water - 4 + 1\2 cups
Salt-needed
Basmati rice - 2 + 1\2 cup
Cinnamon, cardamom, dried lime, little peppercorn - 1 each
Turmeric powder - 1 tsp
Boiled eggs - 2
Saffron - 1\2 tsp soaked in 1\2 tbsp rose water.
Coriander leaves for garnish



Method:-

Clean & wash chicken, pat dry.

Mix half the ground spices(1\2 tbsp) with garlic, lemon juice, salt and 1 tbsp oil.

Rub chicken with the mixture, marinate for half an hour.

Heat half of the oil in a large pan over medium high heat.

Add onion, saute till they turn light brown.

Stir in the rest of the ground spices, mix well.

Add chicken pieces, tomato puree, green chilli, ginger and garlic. Stir for about 5 minutes.

Add tomato(whole), turmeric powder, little salt & 2 cups of hot water.

Cover & cook on medium heat for about 20-25 minutes, until chicken is done.

Remove chicken & tomato from the gravy, keep aside.

Soak rice in water for 30 minutes.

Drain rice and add to chicken broth. Add 2 1\2 cup boiling water, season with whole spices and salt.

Reduce heat, cover and cook until rice is tender.

Grill the cooked chicken until skin is brown. (Or you can fry the chicken by adding some oil to a big pan and frying in medium flame)

Grease a large pot with rest of the oil.

Spread a rice layer, put chicken and boiled eggs, cover with the rest of the rice.

Cover & kept in simmer for 15-20 minutes.

Garnish with chopped coriander & boiled tomato.

Serve warm. :D

Karimeen fry/Pearl spot fish fry

Shes actulally a vegeterian specialist...a Gud collection of veg recpes with her...Shes like a big sister, to me,who helps n guide me in every phase of lyf. Actually I feel lucky to found such sweethearts that i got from facebook.. <3


Ingredients:-

Pearl spot fish/Karimeen– 4-5no
Ginger & garlic paste – 1- 1 1/2tsp each
Kashmiri chilly powder – 1 – 1 1/2 tsp
Turmeric powder – 1/4 tsp
Whole pepper – 1/4- 1/2 tsp
Lime juice – 1-2 tsp
Salt
Coconut oil


Method:- 
1 Apply little salt and lime juice on the fish pieces and
wash it with water.
2 Drain the water.
3 Grind together number 2 ingredients into a fine paste
adding a little water.
4 Make gashes in the fish pieces and marinate the
pieces with the ground paste.
5 Keep the marinated fish for half an hour.
6 Heat oil in a pan and shallow fry the fish pieces.

Serve with onion rings and a slice of lime.

Note:-

Please adjust the qty of spices to suit your taste. The ground paste should not be watery (1/2 – 1 tsp of water is enough while grinding the masala). I usually fry the fish pieces on low-medium flame. Also you can add some fresh curry leaves while frying the fish pieces. You can use the same masala for any kind of fish

Whole green moong dosa/Cheru payaru dosa


Got this super healthy n yummy breakfast recipe from my dear friend Saneeba rafiq of Sister's Cuisine
Its really tasty & Delicious..kids will loved it

Ingredients
•3\4 cupWhole green moong
•3 tbspWhite rice
•1 sml Onion
•1 small pieceGinger
•2-3Green chilli
•Curry leaves-1 spring
•Coriander leaves-3tbspn
•Salt
•Oil

Cooking Directions


1. Soak whole green moong with rice, overnight.
2. In the Morning drain the water & grind green moong  along with onion, ginger, green chilli &
    curry leaves, to a coarse batter, of dosa batter consistency. (if you want thin moong dosa, then    
    grind  smooth)
3. Mix in needed salt.
4. Heat a tava and spread to your required thickness just like we make dosa,add oil.
5. Flip to cook on the other side too.(cook 2 minutes in medium flame each side or till light golden 
    brown)
6. Serve with coconut chutney or chutney of your choice

Chembarathi /Hibiscus/Shoe flower Juice

Can u imagine a juice frm Hibiscus/Shoe flower/Chembarathiii !!!!! Got this recipe from DD-malayalam Channel years back !
 Here I have prepared a colourful Red Hibiscus (Chembaruthi) juice.In south India, these flowers can be seen in almost every home...Its really yummy n healthy too..no one can identify dat its chembarathi juice :)
 Ingredients:-
■Red hibiscus-10no
■Sugar – needed
■Water – 3cup
■Lemon juice – 1 leamon
■Salt – pinch
■Cardamom powder – 1/2tespn

Method:-
■Wash the flowers, remove petals with center parts and keep; discard the green parts
■In a pan take one cup of water and bring to boil; switch off heat, add flower petals and close with
  a lid.
■After cooling, mash the flower petals with fingers; filter and keep the juice
■Then add leamon juice+sugar..stir well
■Finallyy add cardamom powder, salt and mix

Serve chilled

Caramel Custard


Simple n Yummyyy Desert !!!!




 Ingredients:

Milk-1 1/4 cups
Eggs-2
sugar-1/4cup(or more aco 2 u)
vanilla essence-1/2 tsp
sugar-2tbsp for making caramel


Method:-

First boil the milk and keep it aside to cool down.

That time Beat 2 eggs well in a bowl with 1/4csugar , beat thoroughly (u can add more sugar if u wnt),After dat add the cooled milk into the egg mixture and mix well .

no need to beat dis time just mix well. finally add vanilla essence.

Nw take cake tin or anyother round shape vessel for steaming grease dat with ghee.kept it aside.

next is to prepare caramel,take a pan and add 2tbsp sugar with 1 tbsp water stirr continuously until  the sugar turns golden.careful dat dnt make too much brown colour dis il mmake the caramel to a
bitter taste.(the flame should be in a low mode).switch off the flame ,then pour this caramel to the cake tin and shake properly.

after that Pour the prepared milk mixture on the caramalised tin.wrap the cake tin with Aluminium foil paperand keep it in a  steamer.Add enough water to the steamer and let it boil thoroughly .

After putting the pudding mixture into the steamer,the flame must be very low.steam it for 30-40minutes or until the pudding is    completely cooked( u can check with a tooth pick, if it comes out clearly then its cooked properly)When its cooked well take the dish from the steamer let it cool down completely.

 keep it in the fridge for atleast for 1 hr.then invert it

serve chilled&enjoyyyyy

Masala milk/Masala paal


Masala milk  is a wholesome nourishing drink, which tastes irresistible when served both chilled or hot. Children love its delicious healthy taste. It is very easy to prepare at home.


  
  Ingredients:-

  ·  Almonds - 6 to 8
· Cashews - 5
· Pistachios - 5
· Milk - 2 to 3 cups
· Cinnamom - 1
· Cloves - 2
· Cardamom - 2
· Saffron strands - a few(here i didnt add)
· Sugar - 1 to 2 tbsp or more
· Pepper pwd - a pinch
· Turmeric pwd - a pinch




           Method:-
          
           1. Soak almonds in hot water for about 10 to 15 mins along with cashews and pistachios.
2. Peel the skin of almonds and drain the other nuts.
3. Grind the almonds along with other nuts in little milk to smooth paste.
4. Heat milk in a thick bottomed vessel.
5. Allow it to boil and add cinnamon, cloves and cardamom.
6. Simmer for about 10 mins.

7. Discard the spices by filtering the milk.
8. Now add ground almond and other nuts paste.
9. Take care to stir continuously while boiling, so that it does not burn at the bottom of the vessel.
10.Add few saffron strands and simmer for 6 to 8 mins
11.Add turmeric pwd, sugar and pepper pwd (optional )
12.Mix well.
13 Allow to boil in low flame for few minutes
 14 Pour it in a glass and garnish with chopped nuts and saffron.
Note:-
It is best served as hot in winter and cold in summer.It tastes lipsmacking in both ways.

meen aviyal/meen peera


A tradional Kerala dish,thia z our kottayam special item ;) Meen Peera/Meen aviyal is usually made with small fish such as kozhuva/natholi,Small sardines

 Ingredients:-

½ kg kozhuva/anchovies
2 cups grated coconut
10 button onions
½ inch ginger (sliced)
6 garlic cloves (sliced)
3 green chillies (sliced)
½ teaspoon turmeric powder
1 stalk of curry leaves
Salt to taste
3 pieces of cocum/kudam puli (soaked in water)/u can use raw mango also
1 cup water
2 teaspoon coconut oil

Method:-

1 Clean and cut the kozhuva/anchovies into small pieces.
2 Crush coconut, button onions, ginger, garlic and green chillies.
3 Mix these with turmeric powder, curry leaves, salt and fish in a clay pot.
4 Add the cocum and one cup of water and bring to boil.
5 Lower the heat and allow the mixture to get dry.
 Pour coconut oil n curryleaves on top and remove from fire.

Kuboos Upma

Ingredients:-

 kuboos big : 2no store in fridge for 2 days & then grind it in mixi
 green chilly-2no
 Onion-1no sliced
 Chilly powder-1/2tespn

 Ginger-choped 1tespn
 Greated cocnut-1c
 Salt-1/2tespn
 Turmeric powder-1/2tespn
 Water-1/2c
 Oil-3tbspn
 Mustrad-1 tespn
 Curry easf-1spring
 Red chilly-2no


Method:-

 1 Mix grinded kuboos with grated cocnut and keep it aside
 2 In a non stick pan add oil+mustard..wen it cracks..add Red chilly+curry leaf,saute t few mins
3 Then add turmeric powder+Green chilly+ginger..Saute well
4 Then add salt+water..Wen water boils..add Kuboos..mix well
5 Co0k for abt 5-8mins...

Remove frm fire n serve hot !!

Steamed -Semolina/Rava Pudding



Its an easy preparation, pleasant taste when sweetened & high versatility makes this fibre-rich ingredient very popular & special !!!....Taste z almost similar 2 caramel custard :)
I was inspired by this easy recipe from a facebook group-ammachide adukkala..

 Ingredients:-


Milk-2c
Semolina-2 1/2tbsp
Sugar-6 to 7 tbsp
Eggs-2
Ghee-1 1/2 tbsp
Coconut(grated)-2 1/2 tbsp
Vanilla essence-1 tbsp

Caramel Syrup:-

Sugar-2tb
Water-1tbsp

1 take a pan and add 2tbsp sugar with 1 tbsp water stirr continuously until the sugar turns
   
golden.careful dat dnt make too much brown colour dis will make the caramel to a  

   bitter taste.
2 the flame should be in a sim mode.switch off the flame
3 then pour this caramel to the greased tin and shake properly.& keep it 
 


Method:-

1 Take another pan then add milk , semolina , ghee , sugar then place it on flame.

2 Stir well & cook it until rava(semolina) is properly cooked & the mixture becomes thick.

3 After that keep it aside till the mixture comes to room temperature..


4 Mix eggs , grated coconut and vanilla essence in a blender.

5 Mix the semolina mix and egg mix properly and pour it in to the caramelised vessel and
   close it with a lid/Cover well using aluminium foil
6  Steam this  for about 45 mins.

7 When its done ,,,keep it in refrigerator to cool

8 then @ the tym of serving,Upside downnn

So a creamy mouthwatering pudding is ready !!!Enjoyyyy............

Full chicken masala

 Ingredients:-

1 1\2 kg Whole chicken
2 tsp Chilli powder
4 tsp Coriander powder
1\2 tsp Turmeric powder
1\2 tsp Pepper powder
1\2 tsp Fennel seeds powder
200g (2 medium size) Onion
1 cup Shallots, sliced into rounds.
1\4 cup Ginger, finely chopped
1\4 cup Garlic, finely chopped
5 Green chilli, finely chopped
3 Tomato, small, finely chopped
1 1\2 tsp Garam masala powder
1\2 cup Thick coconut milk
50g Broken cashews
25g Raisins
Curry leaves
1\4 cup Coriander leaves
Oil, as required

Cooking Directions:-

1 Clean and wash chicken under running water, pat dry.
2 Make a paste with the turmeric powder, pepper powder, salt, chili powder, coriander powder and  
   fennel seeds powder, along with little water.
3 Draw slits on the meaty part of the chicken. Rub chicken inside out with the half of the masala
   paste, marinate for an hour.
4 Heat 1\2 cup oil in a thick bottomed pan, add onion. Fry till golden brown. Drain the oil & keep
   aside.
5  Heat up the remaining oil, add shallots, green chilli, ginger and garlic and saute well.
6  To this add remaining masala paste and garam masala powder and stir fry on low flame till nice
    aroma comes out.
7  Now add tomatoes, saute till it becomes soft.
8  Add broken cashews, raisins, curry leaves and half of chopped coriander leaves. Saute till oil  
    separates.
9  Add marinated chicken, stir for few minutes.
10 Add hot water and let boil, cover and cook.
11 When the chicken is almost done(75%), add coconut milk.
12 Keep turning the chicken so that all sides cook evenly, in between pour the gravy over the chicken
     and cook on low flame.
13 When the chicken is done and gravy thickens, add fried onions and chopped coriander leaves, mix 
     well and remove from flame.
14 Carefully lift the chicken and place on serving dish, pour the gravy over the chicken,

Garnish with sliced vegetables and boiled egg

Note:- Gud combo with Appom/Chappathi/paratha/Ghee rice

Chocolate Mug cake-Microwave


A 3 minute cake!!
Can you imagine?
In the beginning I had a doubt if it would come out good mainly I have never made a cake that contains plain flour and has no baking powder or baking soda in it.

This is an ideal sweet to serve to guests who come home with late notice, or even as snack!

Ingredients:
4 tablespoons plain flour
4 tablespoons sugar
2 tablespoons cocoa
1 medium egg
3 tablespoons milk
3 tablespoons oil
3 tablespoons chocolate chips (optional) (I used Chocolate cut into chunks)
A small splash of vanilla extract
1 large coffee mug (MicroSafe)

Preparation:-

 1. Rub cold butter inside the Mug completely to prevent the cake from sticking to the mug. Add dry ingredients to a dish, and mix well.
2 Add the egg and mix thoroughly.
3 Pour in the milk and oil and mix well.Add the chocolate chips (if using) and vanilla extract, and mix again. Pour it in the mug prepared earlier.
4 Put your mug in the microwave and cook for 3 minutes at 1000 watts.
5 The cake will rise over the top of the mug, but don't be alarmed! (It really did rise about 3 inches on top of the mug, And I though it would spill all over the microwave, but it dint, So go ahead,Dont
be alarmed )
6 Allow to cool a little, and tip out onto a plate if desired.

 Serve with vanilla ice cream, whip cream, toffee sauce, caramel or simply icing sugar.

Yam in yoghurt sauce










Ingredients
  • 1 med piece Yam
  • 1/4tesp Pepper powder
  • 1/4-1/2c Grated cocnut
  • 1 or 2no Green chilly-
  • 1/4tespn Cumin seeds
  • 1c Yoghurt
  • 1/4tesp Mustard seeds
  • 1/4tespn Fennugrek powder
  • 1 Tbspn Cocnut oil
  • 1 spring Cutty leaves
  • 2 no sliced Small onion
  • needed Salt
  • 1/4tespn Turmeric powder
  • 3-4no Red chilly
Cooking Directions
  1. Beat yoghurt with salt and keep it aside
  2. Cook yam with salt ,pepper n enough water in a pressure cooker(2whistle)
  3. Grind Grated coconut with Cumin seeds,green chilly & turmeric p to a fine paste,
  4. Add this grated coconut to cooked yam,mix well
  5. Wen it starts bubbled,add beated yoghurt and mix all dese well
  6. Cook for few 1-2 mins and remove frm fire
  7. In another pan add coconut oil n wen it starts heat,splutter mustards
  8. then add fennugreek powder n saute it for few mins
  9. then add sliced onioins,Red chilly n Curryleaves !
  10. Serve hot with Rice

Microwave Cornflour Halwa


Just try this simple Halwa on mother's day...Take only 12 minutes 4 cooking..It has a texture just like jelly, but sure sweeter than that. Do try and you will agree that this is the easiest halwa you have ever made! It uses very less ghee unlike other halwa recipe. Got this simple recpe frm Rak's kitchen

And Before going to the recipe, I want to say a very important thing…

Ingredients

1.Corn flour – 1/2cup
2.Sugar – 1 1/2cup
3.Water – 2cups
4.Food color(color you like)- few drops(Optional)
5.Cardamom powder – a pinch
6.Nuts & kismis – 2tsp
7.Ghee – 2tsp
Method






1 Take a microwave safe bowl,add in corn flour,sugar,water,food color,cardamom and 
    mix well without any lumps.





 2 Microwave in high for 6 minutes. After 3 minutes in between, mix once.





3 Again microwave for 6  minutes, stirring in between after every 2 minutes of interval.







4 Fry cashews in ghee till golden brown and mix well. Grease a plate with ghee and pour in the plate
  and let it cool down for 1/2 hour or so.






Cut into pieces and enjoy!




Note:-
  • Stirring in between as mentioned is very important to ensure even cooking.
  • Do not reduce the sugar amount,as it will change the glossy look too and end up in porridge ;)
  • The whole process is made in microwave high power.
  • According to oven the cooking time varies plus or minus 2-3 minutes.
  • Consume within one or two days. Refrigeration changes the texture so it is not recommended.
  • There is a easy way to remember the recipe. 1 part corn flour,3 parts sugar,4 parts water. i.e; which ever cup u use, use the same cup and follow the ratio. Simple.

Orange Jelly cake/Pola/Kums


Its a traditional Malabar's Pola with a twist ! Got this recipe from a facebook cooking page,Friends Cookys..




Ingredients:-

Eggs- 3
Sugar - 3 tbsp
Salt - a pinch
Flour - 3 tbsp
 Orange  jelly powder - 1/2 packet
ghee/oil-1tsp

Method:-

1 beat eggs n sugar till creamy
2 slowly fold it othr ingredients .
3 heat a non stick pan add 1 tsp of ghee/oil n pour the batter ..
4 close the lid and cook for 10 to 15 mnts on low flame.
